Bacon & Bleu Salad

Fresh, simple and delicious - with just a few ingredients you can have lunch ready to go in no time.

Bacon is often a staple on the keto diet. This lunchtime salad is perfect for those seeking flavor, texture and new ways to use bacon. If you are not a fan of bleu cheese, you can easily substitute with feta or goat cheese and still have a similar experience.

Bacon can be used as the main dish, served as a topping or eaten as it, making it widely versatile and desirable. Though often reserved for savory dishes, over the last several years bacon has become accepted as an accessory to sweet treats as well. This salad provides a pretty basic foundation and can be dressed up with all of your favorite toppings. For me, this was the perfect combination in regards to flavor and texture.

Serves two

Simple and tasty - the way lunch should be.


4 cups spinach and romaine

6 slices of bacon, cooked

1/2 cup bleu cheese crumbles

1/2 avocado

6 grape tomatoes

Dressing of choice


Rinse spinach and romaine lettuce and pat dry. Build a base of greens on a dinner plate or salad bowl.

Slice bacon, avocado and tomatoes. Layer all ingredients on top of the greens. 

Drizzle with your favorite dressing.

Serve and enjoy!
