Buffalo Chicken Casserole

Make dinner time healthy and delicious with this easy Buffalo Chicken Casserole. My family loves a nice home-cooked meal, especially one that’s fresh from the oven and gooey with cheese. 


Whether you are seeking a Keto-friendly recipe or simply looking for an easy dinner, this one is for you! As a full time mother, wife, manager, and entrepreneur, life can get pretty busy. Let’s face it, the last thing you feel like doing after a long day at the office is spending hours in the kitchen. In as little as 20 minutes, this dish is oven-ready. Simply pop it in the oven after work and, voila, dinner is served!


Serves six

Creamy chicken casserole - low carb can be delicious, too!

Ingredients

1 head cauliflower

2 tablespoons extra-virgin olive oil

12 ounces softened cream cheese

1/3 cup buffalo sauce

1/4 cup ranch dressing

Sliced green onions

1 tablespoon garlic powder

2 cup cooked chicken, shredded

1 cup shredded cheese

Salt and pepper


Directions

Preheat oven to 450 F. 


Cut cauliflower into florets and toss with olive oil, salt and pepper in an ovenproof baking dish. Bake about 20 minutes, or until tender.


Reduce oven temperature to 350 F.


Combine 12 ounces cream cheese, 1/3 cup buffalo sauce, 1/4 cup ranch dressing, sliced green onions, and one tablespoon garlic powder in a blender until fully mixed. Set aside.


Next, toss the shredded chicken in the baking dish with the roasted cauliflower and spread cream cheese mixture on top.


Top with shredded cheese (I used cheddar) and bake about 20 minutes, or until the cheese melts.


Cool 10 minutes. Top with ranch and green onions before serving.
