A bread full on flavor, not on carbs.
If you're like me, bread was tough to "give up" on keto. Back when I first started this way of eating, you had to make EVERYTHING. You really couldn't find much at the store that was ready-made. Now, a few years later, keto has become much more popular and accepted. Therefore, more products have become accessible at your local grocery store and especially online. Given that, there are still some pretty amazing recipes that you can whip up yourself that are not that difficult.
One morning I had a craving for cinnamon bread but also wanted a creamy, rich center - hence the birth of this cinnamon roll bread. You could omit the cream cheese filling altogether and just stick with the bread recipe. Simply split the cinnamon topping in half, sprinkle half in the middle of your batter and the rest on top to spread out that delicious cinnamon flavor.
Perfect for breakfast or dessert!
The bread is pretty filling and pairs perfectly with your morning coffee or tea. I prepared it as a breakfast item, however, found myself eating it as a snack pretty much any time of the day! 1/4 cup butter, softened
1/4 cup granular sweetener
1 teaspoon baking powder
3/4 teaspoon nutmeg
1 teaspoon vanilla extract
2 cups almond flour
1/4 cup granular sweetener
1/2 teaspoon cinnamon
Cream Cheese Filling
4 oz cream cheese
1 tablespoon of Cinnamon Topping
1 tablespoon heavy whipping cream
Preheat oven to 350 degrees Fahrenheit.
Prepare a loaf pan by oiling or lining with parchment paper.
Beat softened butter, eggs and sweetener in a mixer bowl until combined. I prefer to use a stand mixer to break the butter up best, but any method you desire is fine.
Add remaining batter ingredients and stir until just mixed. Place half of the prepared batter in the loaf pan. At this point, I scraped the remaining batter into another bowl so I could wash the mixing bowl for use with cream cheese filling. It’s much easier to let the stand mixer do the heavy work. However, you can skip and simply use another bowl if desired.
In a separate, small bowl combine cinnamon topping ingredients.
In your clean mixing bowl, add cream cheese, a tablespoon of the prepared cinnamon topping from above, and a tablespoon of heavy whipping cream to allow for a more whipped cream cheese texture. Mix until creamy enough to spread. Spread on top of the batter in your loaf pan. Sprinkle with half of remaining cinnamon topping. Top with remaining batter. Sprinkle remaining cinnamon topping.
Bake 30-40 minutes, or until inserted toothpick comes out clean.
Cool completely. Serve and enjoy!
