Just like traditional mashed potatoes! Discover how easy it is to turn cauliflower into your new potato.
Keto sides may seem challenging, but they don’t have to be! This cauliflower mash is perfect with just about any protein and can be topped however you choose. If you are looking for a substitute for traditional mashed potatoes, look no further. I was surprised how similar the texture ended up being. Not only that, but the taste is quite pleasing as well (even for those who typically steer clear of cauliflower, or vegetables in general for that matter).
At this point, if you are still debating whether to try mashed cauliflower, take this into consideration - cauliflower provides many of the essential minerals necessary on a low carb diet, such as magnesium, potassium, omega 3 fatty acids and fiber. As an added benefit, it is also loaded with vitamin C and vitamin K and is really easy to work with.
Move over potatoes - make room for the cauliflower!
1 head cauliflower
2 garlic cloves
Salt and pepper
2 tablespoons butter
2 tablespoons sour cream
1 tablespoon parsley
4 slices cooked bacon, crumbled
1/2 cup shredded cheddar cheese
Fill a large pot with water. Bring to a boil over medium to high heat.
Rinse cauliflower thoroughly and pat dry. Chop into small florets and place into boiling water.
Boil 10 minutes or until tender.
Transfer cauliflower to a food processor and add garlic, salt, pepper, butter and sour cream. Process until smooth.
Top with bacon, cheddar cheese and parsley. Serve immediately.
