Low Carb Strawberry Crepes

Updated: Jan 21, 2021

Sweet and completely satisfying, these crepes are keto-friendly and a crowdpleaser.

Need a low-carb alternative to eggs? Look no further! These simple and delicious crepes are sure to please. After numerous days of eggs and bacon, these crepes provided all the sweet, fruity flavor I was desperately seeking. New to crepe making, it took a few attempts before I mastered the timing and flipping. I’ve included tips below for best results.

Serves Four to Five

Tip: Use whatever berries you have on hand. This recipe works just as good with blueberries and raspberries.

Crepe Batter

4 ounces cream cheese

4 large eggs

2 tablespoons sweetener

1 teaspoon cinnamon

1/2 teaspoon baking soda

Pinch of salt

4 ounces cream cheese

1/2 teaspoon vanilla

2 tablespoons powdered Swerve

5 strawberries

Olive or coconut oil for frying

Sliced strawberries for garnish

Heat oil in a frying pan over medium heat.

Add all crepe batter ingredients and mix well. Batter will be runny.

Tip: I find that a blender or mixer works best to thoroughly blend the cream cheese.

Pour batter in hot pan (1/4 cup or so for each crepe). Immediately move the pan in a circular motion to evenly distribute batter. You want to thin it out as much as possible and get a nice even circle.

Allow to cook several minutes, or until edges are crispy. Carefully wedge a spatula under the crepe to flip. Allow to finish cooking. Finished crepe will be somewhat crispy and begin browning.

Tip: Flipping too soon will result in ripped crepes. Be very gentle!

Repeat with remaining batter.

To prepare filling, add all filling ingredients to a mixer or blender and beat until thick and creamy.

Tip: I often make this recipe the night before and lay the crepes on a silicone-lined baking sheet and cover with plastic wrap. Chill in the fridge over night and simply pop in the oven to reheat before serving.

Line center of each crepe with filling and top with freshly sliced strawberries. Roll the crepe up and top with additional filling and berries, if desired. Serve and enjoy!
