One Pan Chicken Sausage & Veggies

A weekly favorite at my house - this recipe is so easy and tasty.

Quick and easy - this recipe is perfect for a weeknight dinner. I often cut all of the veggies and keep them on hand in the refrigerator until needed. Simply toss it all in a frying pan with some olive oil and seasoning and - bam! - dinner is served. Any smoked sausage will do (just check the label if you are following a low carb diet - some of the flavor additives have sugar). I also use whatever veggies I happen to have on hand.
Aside from simplicity, my family really enjoys the flavors in this dish. Typically, this is enough to feed my family of five, however, last time I made it it just wasn't enough!
Serves five
The perfect weeknight dinner.
Ingredients
1 green bell pepper
1 yellow summer squash
1 small red onion
2 garlic cloves
1 package smoked chicken sausage
Salt and pepper to taste
Directions
Heat oil in a large skillet over medium heat.
Chop pepper, squash and onion into bite-sized pieces. Slice chicken sausage.
Mince or chop garlic cloves and sauté until fragrant. Add vegetables and cook 4-5 minutes. Season with salt and pepper. Add chicken sausage and cook another 5 minutes, or until heated through.
Remove from heat. Top with parmesan cheese, if desired.
