This breakfast classic is simple, delicious and a great make-ahead dish for busy mornings. Chock full of protein, this one is sure to keep you full and kick your day off right. Easily add more fiber by adding your favorite veggies. I added spinach to this dish but have added a variety of vegetables over time - bell peppers, onions and mushrooms also work well.
Depending on your preference, or what's in your fridge, you can use any type of breakfast sausage. I have tried both pork and turkey. Simply cook up the meat, mix up the egg mixture and layer it up. Bake in the oven and breakfast is served!
1/2 cup heavy whipping cream
2 cups shredded cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon oregano
1/2 tablespoon parsley
1 cup fresh baby spinach leaves
1 pound ground sausage (pork or turkey)
1/2 teaspoon garlic powder
Preheat oven to 350 degrees Fahrenheit. Grease a 8x8 baking dish.
Heat a large skillet over medium heat. Add sausage and garlic powder. Cook until no longer pink.
Mix eggs, heavy whipping cream, 1 cup of shredded cheese (I used cheddar) and remaining seasonings to a bowl. Whisk until blended.
Layer baking dish with ground sausage, spinach and then the egg mixture. Top with remaining cup of cheese. Sprinkle with additional parsley, if desired.
Bake 40 minutes, or until eggs are fully cooked and cheese begins to brown.
Remove from oven. Cool slightly before serving. Enjoy!
