Loaded with chocolate flavor, these muffins are acceptable as breakfast or dessert!
Have dessert for breakfast!
With flavor this good, I'm still in awe that this qualified as low carb. A huge chocolate lover (like me) will absolutely fall in love with these muffins. Trust me, it will be hard to stop at one. Deliciously healthy, so you can have your muffin and eat it too!
These are a favorite in my house. The kids think they are having dessert for breakfast!
1 cup almond flour
1/2 cup unsweetened cocoa powder
1/2 cup granulated sweetener
1 1/2 teaspoons baking powder
1 teaspoon vanilla extract
2/3 cup heavy whipping cream
3 ounces melted butter
1/2 cup sugar free chocolate chips
Preheat oven to 350 degrees Fahrenheit.
Combine 1 cup almond flour, 1/2 cup cocoa powder, 1/2 cup sweetener and 1 1/2 teaspoons baking powder in a large mixing bowl.
Add 1 teaspoon vanilla, 3 eggs and 2/3 cup heavy whipping cream and mix well. Add melted butter.
Fold in chocolate chips.
Using liners or a silicone muffin pan, spoon mixture in twelve equal parts. (You can also opt for mini muffins, just split into smaller equal parts and shorten the baking time.)
Bake for 20 minutes. Insert a toothpick to check. Muffins will spring back to the touch.
Cool and enjoy!
