The Best Low Carb Nut & Seed Granola

This is probably my absolute favorite breakfast food on the keto diet. It provides the satisfying crunch and tasty flavors I love.

This low carb granola is a healthy alternative to traditional cereal and granola. For those on a low carb diet, such as keto or paleo, or those seeking gluten free alternatives, this recipe is for you!

I absolutely love the crunchy goodness of breakfast cereal mixed with a tall cup of almond milk. This granola does the trick! It is perfect as a snack or a complete meal. Sprinkle it on yogurt, oatmeal or even ice cream - the possibilities are endless and oh so yummy! Mix and match nut, seed and berry choices to suit your diet.

Serves Six

This granola is a weekly staple at our house. It keeps for the entire week and makes for an easy breakfast.


1/3 cup walnuts 

1/3 cup almonds

1/3 cup peanuts

1/3 cup whole pumpkin seeds

1/3 cup whole sunflower seeds

1/4 cup ground flax meal

1/4 cup unsweetened dried cranberries

3 tablespoons Lakanto Maple Syrup (or honey)

1 tablespoon melted butter, ghee, or coconut oil

1 tablespoon powdered Swerve - optional

pinch of salt

1 teaspoon of cinnamon ​


Preheat the oven to 350 F. Line a large sheet pan with a silicone baking mat or parchment paper. If you haven’t tried silicone baking mats yet, now is the time. These little wonders not only eliminate the waste of foil and parchment but make clean up a breeze as well!

Combine nuts in a food processor or chop using a knife. I like to make things easy, so I use the food processor. Not only does it do the heavy chopping for you, but I prefer the smaller size of the nuts.

​Mix in the seeds, dried fruit and ground flax meal. Pour Lakanto Maple Syrup (or honey) over the nuts and seeds. Mix thoroughly. Add one tablespoon melted butter (or ghee or coconut oil), a pinch of salt and the tablespoon of powdered Swerve (if using) and, you guessed it, mix again.

Spread the mixture evenly on the prepared sheet pan and bake 20-25 minutes, or until slightly golden in color (for best results, stir granola about halfway through bake time). Remove from the oven and allow to cool completely. Store in an airtight container.
