Fresh, simple and delicious - this lunchtime favorite provides all the crunch and flavor you need.
Lunch doesn’t get any easier than this tuna salad wrap. Perfectly keto, simple and delicious, this meal is a go-to for our family of five. Lettuce wraps are the new bread! I have found this healthy substitute to be a life-saver when you just need a sandwich or a wrap.
Loaded with vitamins and minerals, tuna fish has high levels of omega 3 fatty acids, making it an essential element on the keto diet. These omega 3 fatty acids help reduce the cholesterol in the arteries, resulting in improved blood flow and overall enhanced heart health.
You can add just about any flavor or vegetable you want, making this a versatile meal option. I typically alternate between celery and pickles, to give it that crunch and extra burst of flavor. I recently experimented with adding bell pepper and found it not only gives it a bold look, but enhances the juiciness and the crunch factor as well.
Perfect for a make ahead keto lunch.
12 ounce can solid white tuna
2 tablespoons mayo
1/2 cup celery, sliced
1/4 cup red bell pepper, chopped
1/2 cup shredded mozzarella cheese
1 teaspoon garlic powder
Salt and pepper to taste
4 large romaine leaves
Thoroughly drain tuna.
Combine tuna, mayo, celery, bell pepper, cheese and seasonings in a small bowl. Mix well.
Rinse and dry romaine leaves. Top with tuna to form lettuce wraps.
Serve with cottage cheese and pork rinds.
