Your New Favorite Grilled Cheese

I’m learning that zucchini is a very versatile veggie, especially on a low carb diet. In a matter of days, I’ve made three delicious recipes (all low carb) with zucchini as the main ingredient. My family really enjoyed this grilled cheese. An alternative to bread, this provided all the hot, melty cheese you expect from a traditional grilled cheese sandwich with way less carbohydrates. Season how you prefer, salt and pepper were enough for me. I used shredded cheese, simply because it melts better than sliced or block cheese. Let’s be real, a grilled cheese isn’t a grilled cheese unless it is melty and gooey!


Serves six

Crispy and cheesy - just like the original!

Ingredients

2 zucchini

1 egg

1/4 cup parmesan cheese 

1/4 cup shredded mozzarella cheese

Salt and pepper

2 green onions

1/4 cup cornstarch

2 cups shredded cheese (for the filling)

oil for frying


Directions

Add oil to frying pan and heat over medium heat. 


Meanwhile, wash and dry zucchini and green onions. Grate zucchini to desired thickness - I chose the larger option. Finely slice green onions.


Squeeze moisture from grated zucchini using paper towel. Once dry, mix in a medium sized bowl with 1 egg, 1/4 cup parmesan and 1/4 cup mozzarella cheese, green onion slices, and 1/4 cup cornstarch. Add salt and pepper to taste.


Spoon small, rounded drops of zucchini mixture into the pan. Flatten with spoon and allow to cook for several minutes, browning prior to flipping. Repeat on opposite side. I cooked two patties at a time. 


Place zucchini patties on a paper towel-lined plate, allowing excess oil to drain. 


After all patties have been cooked, transfer back to hot pan. Top with shredded cheese and additional patty to form a sandwich, just like a traditional grilled cheese. Remove from heat when cheese is gooey.


Plate and serve!
